Take taco night to a whole new level!
These little beauties should be a staple in your fridge! Quick pickling means you're not investing a lot of time and effort but you are still rewarded with bright fresh flavor to add to salads, tacos, sandwiches, burgers or as a garnish to just about anything. Optional add-ins include sliced garlic, black peppercorns, allspice berries, springs of thyme, one or two dried chilis.
Special equipment: small jar with a lid
1 medium red onion, sliced (thinly- thickly, in rings, this is preference only)
1/2 teaspoon sugar
1/2 teaspoon salt
3/4 cup apple cider vinegar
Bring 2-3 cups of water to a boil.
Combine the sugar, salt, vinegar, and optional add-ins in a small jar with a lid. Stir to dissolve.
Place the sliced onions in a sieve. Place the sieve in the sink. Slowly pour the boiling water over the onions and let them drain. Transfer the onions to the jar and stir gently.
Refrigerate least 30 minutes, but preferably several hours, before using. Store unused pickled onions in the refrigerator.
