These are easy to make at home. Here’s how: Bring 3 cups of water to a boil and slowly pour over a peeled and thinly sliced small red onion that you’ve placed in a strainer in the sink. Allow the onion slices to drain while you shake up ½ teaspoon
sugar, ½ teaspoon salt and ¾ cup apple cider vinegar in a pint jar with a lid. Once the sugar and salt are dissolved, add the drained onion slices and stir. Secure the lid. In about 30 minutes the onions will be bright pink and ready for use. Stash them in the fridge, still in their liquid, for up to a couple weeks. Voila! An instant pop of both color and flavor is now at your fingertips!
